I am absolutely convinced that laughter is the fountain of youth, and it looks like I’m going to be 13 for the rest of my life!
Today, one of my besties, Kim, and I grabbed our cameras and headed out into the sunshine. Kim ( WhiskeyTangoFoxtrot4 ) makes me laugh hardcore whenever we’re together. She just has to look at me, and I’m off on a wild ride. Together, we’re the type of idiots who you see doubled over, laughing hysterically at city park signs that alert the public to high levels of beaver activity…booyah!
Kim’s a lovable friend, who has seen me through thick and thin over the years. She gets me and I get her. How lucky is that? My wish for everyone is that you all have a Kim who keeps you 13 too!!!!

Okay, so this is laughable now. Imagine laughter verging on the brink of hysteria! My kids are both home sick with head colds AGAIN for the billionth time this winter!!!!!
Hey…Universe…it was barely funny the first few times…now it’s just poor sportsmanship!
So I let the alarm clock slide this morning and slept in until 9 a.m.!!!!!! It wasn’t a good sleep-in, though. It was one of those groggy, nightmarish sleep-ins, when you dream about a jet crashing into the local bay and you have to save everyone (yes, my ego IS that ginormous).
Now I’m all discombobulated. I can’t seem to get my wheels under me. However, I did manage to pull it together enough to pop into our local french bakery and pick up some soul food!!! I just got home and paused just long enough to snap this photo, then I gulped down my coffee and munched on the delicious apple danish, with big soft chunks of apple and delicately drizzled lines of sugary goodness on a soft, flaky pastry. My bad!

When I spotted the harbour wall, I was impressed by the repeating pattern and the way the greens, blues and greys intermingled. It makes me think that someone put a lot of thought into beautifying Vancouver’s Coal Harbour, right down to the Art Deco detailing on the sea wall (I apologize to all the architects out there who are laughing hysterically at me for calling it Art Deco. I have no idea if it is or not…just a guess).
No photos with this post. Just a quick little recipe that I made up. I whipped up a batch this afternoon, and I’ve gotta say, they’re FABULOUS!!! I call them my 3-B Muffins ’cause they include Bananas, Blueberries and Blackberries.
Jen’s 3-B muffins (Banana, Blueberry & Blackberry)
3 cups all-purpose flour
2 tsp baking powder
2 tsp baking soda
1 tsp salt
½ tsp cinnamon
6 large mashed bananas
2/3 cup melted butter
1 cup sugar
1 cup fresh black berries
1 cup fresh blueberries
Preheat the oven to 350 degrees F (175 degrees C).
Line muffin pan (recipe makes 16 muffins).
In large bowl, mix together the dry ingredients (except the sugar), and set aside.
In another bowl, mix together the wet ingredients (plus the sugar). Whisk until well combined.
Pour the wet ingredients into a well in the middle of the dry ingredients and mix just until everything is combined. The trick to tender muffins is not mixing the batter vigorously. Gently fold in the fruit and mix just to combine. Fill muffin cups and bake for 30 to 35 minutes until tester comes out clean and tops are golden brown.

I am really, really fortunate to have some awesome friends. A couple of my besties brought this beautiful bouquet to me on Friday, which instantly brightened my day…my whole weekend!!! When I see that intense pop of colour every time I walk through my kitchen, I think “In your face, Winter!!!” How can you not feel better when you see such beauty?
Actually, I love winter, can’t deny it, but it’s time for some colour outside and in.
